The Beauty Collagen Hot Pot or Bijin Nabe experience – Manila!




A popular Japanese restaurant has arrived in the Philippines, ready to give our palate an experience never before seen beyond Japan and Singapore. A first of its kind in Manila, Bijin Nabe by Tsukada Nojo is a unique Japanese farm-to-table concept restaurant that is popular in the region for its signature Beauty Collagen Hot Pot, also known as Bijin Nabe.

You read that right, Beauty Collagen on a hot pot! Giving one a delicious meal while ensuring a youthful after effect in your body! How cool is that!

And this never before seen concept is something I tried a few days ago. And as they say, it all begins with the broth.

But before I take you to my youthful journey let me first give you an idea where this new concept came from.

The brand is the brainchild of the Tsukada Nojo (Japanese for “Tsukada Farm”) – a pioneering private farm from the Miyazaki Prefecture in Kyushu, Japan –  which is acclaimed for its high quality poultry raising methods.

With its bona fide background, Bijin Nabe by Tsukada Nojo guarantees a new kind of authentic japanese culinary experience.

Just like its overseas couterparts, the Philippine branch of Bijin Nabe by Tsukada Nojo uses the Golden Collagen Stock –  a rich, exquisite broth that is specially concocted for the famous Beauty Collagen Hot Pot. To ensure quality, the broth is imported from the Miyazaki Prefecture in Japan, which is home to the Jidori Chicken.

Now back to our foodtrip! Jidori is a special breek of chicken that’s meatier and more sinewy, making them tastier and richer in collagen.

Too much terms to remember but I just like you to know too that this famous broth undergo to an 18-hour stewing process until the essence of the bones and meat are completely dissolved into the stock.

The result? A delicately milky chicken broth that makes a delicious and enjoyable dish when combined with the freshest vegetables, seafood, and chicken.

To add unique dimensions to the flavor the soup, Bijin Nabe is best paired with a selection of four condiments: the light soy sauce that is Shoyu, the flavourful Leek oil, the zesty spice of Yuzukosho, and the aromatic chili layu sauce.

How to enjoy your Bijin Nabe? Just follow these steps.

Steps to Enjoy your Bijin Nabe

  1. Once Bijin Nabe is served, it will be heated to melt the soup. You can savor the aroma of the collagen soup as it slowly melts.

2. Once the soup reaches boiling point, the service staff will then serve chicken and the broth. Sip and try the pure flavor of the golden collagen soup with tender chicken meat.

3. The server will then add tsukene and vegetables to the pot. Once  it is ready, the nabe will be portioned out and served.

4. When the vegetables are portioned out, the shrimp will be added into the soup. Once fully cooked, server will peel and served for you to enjoy the sweetness of the shrimp.

5. After the shrimp is consumed, the server will prepare the zosui by adding japanese rice to the remaining soup. The rice will absorb the flavors from the collagen soup, creating a tasty rice porridge.

Aside from the ordinary dining fare, the very personal dining experience is another thing that I love about Bijin Nabe by Tsukada Nojo. The restaurant’s passionate service staff treat every bowl as a piece of art. Giving it ceremonial respect that’s usually reserved for the most exquisite of Japanese cuisine. As such, they are well-trained and poised to guide diners, all in the effort to make your experience as authentic as can be.
