Cheesecake Festival and New Flavors from Uncle Tetsu
When you say cheesecake, the first thing that usually comes to my mind is that sweet, rich and creamy New York-style cheesecake. When I was a kid, and when I first tasted it, I thought it was the only kind of cheesecake we have. I felt a bit enliven having eaten even a portion of it for it was a bit too pricey back then. That misconception have eventually change when I was introduced to the many other cheesecake version we have. Pastry chefs nowadays have their own interpretation on how to make their cheese cake different and stand out. And my preference of knowing which taste better also change. One of my recent favorite is the famous cheesecake from Japan. I find it balanced with the right amount of sweetness and saltiness.
